    Mumbai (Maharashtra) [India], May 23:  This May, the Hilton Mumbai International Airport opens its doors to ‘Saudade & Spice: East Indian Food Memories’, a three-day culinary pop-up that revives and reimagines the rich food heritage of the Indo-Portuguese community. Held from 23rd to 25th May, the experience is co-curated by Chef Altamsh and Chef Michael Swamy, collaborating with VEEN, the official natural mineral water partner, creating a celebration where every element – from the spices to the water – tells a story.

    The shared commitment to craftsmanship, culture, and curation lies at the heart of this collaboration. VEEN’s mineral-rich natural water, sourced from the Himalayas, is thoughtfully paired with each course to enhance the depth of flavours and promote a more mindful, flavour-forward dining experience.

    “Water is not just what you drink between bites; it is a silent ingredient on the table. When paired correctly, it enhances flavours, balances intensity, and allows the cuisine to speak for itself,” says Ganesh Iyer, Managing Partner at VEEN India and India’s first Certified Water Sommelier. “Collaborating with a cuisine as layered as East Indian food allows us to showcase how even water can serve as a storytelling medium.”

    The menu draws inspiration from deeply personal food memories and community traditions. Highlights include Fish Chinchoni, a kokum-infused salmon curry; Bandra East Indian Lamb Chops, chargrilled with signature bottle masala; Bhujing Arancini, a smoky chicken and poha croquette; Risoles, golden parcels of prawns or vegetables; and Khimad, a local spiced beverage made with tea and gin. The main courses feature classics like Curried Lamb with Lentils, Veg Lonvas, and Matharpacadi Roast Chicken, served with traditional accompaniments such as Fugeas, Chitaps, rice, and earthy salads. To finish, indulge in the decadent Indrani Rice Crème Brûlée, nostalgic Lethri with Ice Cream, and warm Water Chestnut Sheera.
